spinach with eggs

This 10 Minute Healthy Breakfast Recipe is perfect for busy people. This recipe is quick to prepare and easy to make. In just about 10 minutes, you’ll have a healthy meal on the table. Enjoy!

One of the reasons why I started this blog is I want to teach myself how to cook one meal at a time. I grew up with my mom always cooking for us. Even now that I’m working from home, she’s always in charge of the kitchen. I love she’s doing that for us, however I want to taste other flavors and not just the usual dishes.

So now that I have a lifestyle blog to run, I want to explore foods from around the world. Probably, I’ll start with Filipino foods then along the way I want to experience the food of foreign countries. So stay tuned for that and good luck to me! Haha!

I’m a simple mom, and whenever I’m busy with my side gig or running around with my daughter or whatever stuff I’m doing and feels like I don’t have time to make a 1-hour dish, I’ll prepare a simple and yet at least nutritious meal to start my day.

I know there is nothing fancy about this 10 Minute Breakfast Recipe, but dude this recipe is healthy, quick to prepare, and easy to make.

How To Make This 10 Minute Healthy Breakfast Recipe?

Remove the stems of the spinach as close to the leaves. Then wash them thoroughly under cold water.

Cut some garlic. Heat the oil in a pan and add the garlic. Sautee the garlic until golden brown. Put the spinach, let it cook for 2-3 minutes and set aside.

In a small bowl, crack the eggs. Add salt and pepper and whisk the eggs until fully scrambled. Put some butter and a little amount of cooking oil in the pan. Cook the eggs.

On a separate plate, arrange the cooked spinach and eggs, put some toasted bread, and enjoy your breakfast with family!

What Can I Eat as a Side with My 10 Minute Healthy Breakfast Recipe?

If you’re trying to cut down on carbs, you can eat this dish by itself. Sometimes that’s what I’ve been doing. Most of the time I eat it with toasted bread. You can eat this dish with rice, too!

Different Variations

You can use a variety of other proteins with your spinach. I particularly love to substitute eggs with breast chicken. Or put tomatoes, ham, and cheese to my eggs and spinach, and it’s delicious! Try these other protein sources in your spinach, too:

  • Salmon
  • Canned tuna
  • Shrimp
  • Sausage
  • Sardines
  • Tofu
